Fully recovered and reinvigorated: Postcard Inn Beach Resort & Marina is at 100 percent and welcoming back locals and guests to Raw Bar this weekend.

Delivering the original Raw Bar experience with a new two-story design, Raw Bar sits 25 feet above the Atlantic Ocean and is one of the only double-deck raw bars in the Keys. Featuring open-air space, the scene is casual and relaxed. Up top, the bar offers an adults-only destination to sit back and enjoy a Cuban punch or margarita and some menu choices like peel & eat shrimp, Bahamian Conch chowder and sandwiches.

“We’re ecstatic. We’re over the moon over this place,” said Chef Chris Cash. “We can’t wait to have this place filled up to dish out some awesome food. We’re doing everything from the freshest tuna to the freshest grouper. We’re trying to make sure we’re keeping everything up where our standards are, which are really high for the locals and our guests.”

With Raw Bar set for a grand opening Saturday, Nov. 2, it’ll mark the end to the resort’s restoration efforts following Hurricane Irma. And it’s the start of a new chapter in the resort’s story.

“It’s going be anywhere from laid back to high energy,” Cash said. “You get up on that upstairs bar where it gets packed, it’s going to be a lot of fun energy. We have amazing bartenders up there who are personable. Down below, it’ll be a laid back, more family feel.”

Overall, Cash said reception has been positive since a soft opening earlier in the week.

“Everything’s come back great,” he said.

Jim McCarthy is one of the many Western New Yorkers who escaped the snow and frigid temperatures for warm living by the water. A former crime & court reporter and city editor for two Western New York newspapers, Jim has been honing his craft since he graduated from St. Bonaventure University in 2014. In his 4-plus years in the Keys, Jim has enjoyed connecting with the community. “One of my college professors would always preach to be curious,” he said. “Behind every person is a story that’s unique to them, and one worth telling. As writers, we are the ones who paint the pictures in the readers minds of the emotions, the struggles and the triumphs.” Jim is past president of the Key Largo Sunset Rotary Club, which is composed of energetic members who serve the community’s youth and older populations. Jim is a sports fanatic who loves to watch football, hockey, mixed martial arts and golf. He also enjoys time with family and his new baby boy, Lucas, who arrived Oct. 4, 2022.
